I discovered this recipe when I was on a weight loss kick and I was doing the Mediterranean diet. Which by the way my doctor recently suggested I follow due to a medical issue I recently had. The other day I decided to make a healthy zucchini side dish for supper. And it is so good. Sometimes it is all I have, the recipe is that filling.
I have never tried growing zucchini but I have heard the plants keep producing and you can be overrun with them. That reminds me, I need to share my zucchini bread recipe.
So anyway I think you will enjoy this recipe and it is one way to use all of those zucchini’s you are growing. It is a quick recipe to prepare and you should have the ingredients on hand.
As usual, I do make some small changes. Isn’t that the fun of cooking? Sometimes I add yellow squash or Portabella mushrooms. When I add the mushrooms that really makes a meal as I always think of Portabella mushrooms as a meat substitute.

Make A Healthy Zucchini Side Dish For Supper
- 1 Pound Baby zucchini or 3 medium zucchini
- 1 Tbsp olive oil
- 1 Small Onion, cut into thin wedges
- 1/4 Cup chopped walnuts
- 1/2 tsp Dried oregano, crushed
- 1/4 tsp salt
- 1/4 tsp Pepper
Rinse and trim zucchini. If using the medium zucchini, cut in half and then into 1/2" thick slices.
Heat olive oil in a large nonstick skillet over medium heat. Add zucchini and onion. Cook, stirring occasionally, for 6 to 8 minutes or until the vegetables are tender.
Add walnuts, oregano, salt, and pepper. Cook and stir for 1 more minute.
