Quick and easy is always a plus. With this recipe, you can keep the ingredients on hand because the shrimp are frozen. The other ingredients are artichokes and olives along with some other things.
This can be a recipe to go to if you are having company over. I like serving it with garlic bread and a Cesar Salad. But I can also make it for myself. If that is all I have I am perfectly happy.
Now you also know I tweak recipes, this one is no exception. I happen to love Portabella Mushrooms. So one day I substituted the mushrooms for the shrimp, it was pretty good. If you do decide to try it that way, then use lime juice in place of the lemon juice. And instead of black pepper use white pepper.

You Will Love This Recipe If You Like Shrimp
- 8 Ounces Linguine Uncooked
- 1 Pound Unpeeled Medium Shrimp
- 1/4 Cup olive oil
- 3 Cloves Minced Garlic I add the ready made minced garlic. I eyeball the amount because I love garlic.
- 1/2 Teaspoon Dried Crushed Red Pepper
- 1 14 Ounce Can Artichoke Hearts Drained and Quartered
- 1/2 Cup Ripe Olives Sliced I chopped the olives
- 1/4 Cup Lemon Juice
- 1/8 Teaspoon salt
- 1/8 Teaspoon Pepper
- 1/2 Cup Grated Parmesan Cheese
Cook linguine according to the directions on the package, drain and keep warm.

Peel shrimp and devein, if desired
Heat oil in skillet over medium high heat; add shrimp, garlic, and red pepper. Cook, stirring constantly, 5 minutes or until shrimp turns pink.
Stir in artichoke hearts and next 4 ingredients. Add to pasta, and sprinkle with cheese.
